Doc Swinson's Alter Ego Triple Cask Straight Bourbon Whiskey - When it comes to the Alter Ego Bourbon, we changed our finishing process to include two different types of Sherry Butts (PX & Oloroso), Cognac Puncheons and a long resting period in ex-Cognac Foeders to finish the marrying process.
This system took a while to build for several reasons, one of which was our desire to work with specific Sherry Butts from one of the oldest regions of fortified wine.
It took us some extensive searching before we found these Butts from Montilla-Moriles Spain where their Sherry Solera Pyramids date back to the 1920’s!
