Sonoma Distilling Co., founded in 2010 by Adam Spiegel, has been committed to producing craft whiskey from 100% local, non-GMO grains for almost a decade. Sonoma Distilling Co.'s rye whiskey is double distilled in handmade copper pot stills. This gives it extra weight and body that translates into punchy flavour after at least fifteen months in oak. The mashbill is 80% unmalted Californian and Canadian rye, and 20% malted rye from the UK, giving it a hugely spicy backbone, and nutty and fruity top notes.
